...Eggs.
Every other day I boil four. I have four going right now. I love the sounds of the rolling boil. I've been eating two every morning. I know, two eggs a day. Wow. I only eat one yolk. I give the other one to my dog. She loves it. The great thing about eggs is that they are super easy and super tasty. I pair them with a simple fruit like blueberries or grapefruit and add a spoonful of nut butter and I am on my way to a terrific day.
Eggs are cheap and easy to manage. You don't have to use them right away like other proteins (chicken, turkey, etc.). I know there is a lot of conflicting thought on eggs and paleo, but I happen to think they are a perfect food. Pick up a carton today and start your day off right with some super protein.
I love eggs, too! I boil 12 at a time. Between my husband and me, we eat a ton of eggs. We buy the big carton of 30 eggs and go through them in less than a week. The only downside to hard-boiled eggs? They make my fridge smell like farts.
ReplyDeleteWhen my husband and I started doing Primal Blueprint (much like paleo) he was concerned about the eggs. I told him to go with it until his next check up (high cholesterol for life...on meds). After just 3 months his cholesteral was the lowest it's ever been, and he eats eggs almost every day now. Amazing!
ReplyDeleteWe do eggs also... our new obsession is the hardboiled rolled/sauteed in Tamari from the Primal cookbook. (I was a little hesitant regarding the tamari with the sodium but it just takes a little. and we recently saw that there is a coconut based sauce that we are going to try as well at Whole Foods) It's a nice twist to one of our staples.
